Okro soup for the soul

Today was a dull day in Edmonton. After running around in the rain while doing errands, I decided to treat myself to one of my favourite comfort soups—okro soup. No, not the type of okro soup you eat with pounded yam. It’s the kind you simply enjoy with a spoon. My special okro soup is something I like to crawl into my cozy couch with on a dull, rainy day like today and just relax.

It’s easy and quick to make and all you need are four simple ingredients: fresh okro, pepper, spinach and shrimp.

Step 1: Boil  the shrimp in a pot for about 10 mins.

Step 2: Chop up the okro, pepper and spinach to your preferred size.

Step 3: Drain the shrimp after boil and saute all four ingredients in olive oil.

Step 4: Add water and cook for about 5 mins.

…and you’re done. Enjoy!
